Trying something new for this edition of T stands for Tuesday. Mini-me helped make the first batch of lefse for the season. I took a series of photos and linked them as a slideshow. Fingers crossed that this works.

It’s been a busy, weird week that has included but not limited to:

~an overnight dog visit that went reasonably well with Marvin the dog hater cat

~two turkey dinners

~precipitation of all kinds and in all directions: rain, snow, sleet and hail

~one panicky ER visit which turned out very benign

~one partially dislocated jaw (unrelated to the above)

~all four of us on vacation for 5 overlapping days plus extras on both ends

~late night scratch made brownies

~4 teen boys Black Friday shopping (for themselves)

~one Christmas tree set up and was still standing in the morning (amazing!)

I’m absolutely positive there was more but that is all I am able to wrap my mind around at the moment.

Kids go back to school after a 6 day break…and a mountain of laundry awaits. Living the dream boys and girls. Actually, that is serious! Yes, we all love to complain about the pesky chores of life but I am so thankful for every day that I am able to be home caring for my family.

Today for T stands for Tuesday, I’m sharing a bit of my Norwegian heritage.

LEFSE

Lefse is made from potatoes, evaporated milk, butter, flour and a touch of sugar and salt.

It’s a two day process. The first day you boil the potatoes and add everything but the flour. The potatoes then have to sit overnight to cool. I make my mashed potatoes as if I’m going to to be making lefse…that way if there are leftovers and I’m so inclined they are ready to go.

I use my Kitchen Aid mixer to stir in the flour. That mixer was our very first major purchase as a married couple even though we really couldn’t afford it at the time.  I told Mr. G that I was going to need one to be as good of cook as my mom.  I use it all the time!  We’ve definitely gotten our money’s worth out of that machine.

The trick to good lefse is rolling them very thin without using a ton of flour.  Its a balancing act between having the potatoes to wet and sticky and having a dry flavorless lefse.

The thin lefse is rolled onto the turning stick (to the right in the photo) then placed on the grill. I got this grill at an auction almost 20 years ago for $7 and it was brand new still in the box! They retail for well over $100.

The lefse is cooked on each side for 1-2 minutes.

There is nothing low cal, low carb about this treat. I like just butter on mine before rolling and inhaling eating. Many use butter and sugar, some cinnamon sugar. It’s really a personal preference and usually a family traditional way to serve them.

Big J drove me to deliver some to a few special Norwegians around here yesterday afternoon. It’s always nice to see those smiling faces when I hand over this decadent treat. Makes the work totally worth it!

We’ve got freezing drizzle coming down today so I’m likely sticking close to home.

Happy Tuesday! We’ve got light snow flurries coming down at present. But nothing like the 10+ inches of snow we got on Saturday!! That was tree branch breaking snow…this is the pretty stuff.

Today I’m having my tea with another special Norwegian treat…LEFSE. So, of course, I had to drink it out of a Scandinavian tea set.

I made the lefse on Sunday afternoon. Each time I make it I get a little better at it. I don’t use a recipe because I hate to measure. Growing up I was always around when mom made her lefse. She would talk about how it should feel, look and taste. She never measured either.

My creative actively during December was limited to my sewing room. Not purposefully but it just worked out that way.

I made a bunch of fabric clusters from scraps like these.

As well as adding a handful more scrappy blocks to my ever growing stack.

This past December was very un-December-like for Minnesota. Warm temps, barely any snow…definitely not the norm.  But having the soft glow of the Christmas tree lights helped make it a bit more festive.

Marvin is always a fan of the tree…and bows. Bows are his favorite.

My mother-in-law gave me her Dicken’s Village collection. I chose a few favorites to set up on top of my lawyers bookcase. The photo is really poor but you get the idea.  I was very sparse in my decorating this year to be honest. Without Mini-me home for Thanksgiving to help and get me in the spirit, I took a more minimalist approach.

She did return home on one of our worst weather days…and as you can see, it wasn’t an uneventful trip. She went off the interstate into the median. Thankfully the safety cables caught her from heading into oncoming traffic. She was able to put the Jeep in 4 wheel drive and get out on her own. After accessing the damage, she drove the additional hour or so home. Mr. G was able to fix it up with new and used parts. I did a little spray painting…it’s good enough for the kids we hang out with.

J surprised me at the high school holiday concert. He didn’t think he’d get out of work in time but was able to get there just a bit late. At the end of every holiday concert, all the choirs combine to sing Sussex Carol. The alumni attending are invited to come on stage and sing. J and a friend were two of many that went up to sing. It brought me so much joy!!!

My second batch of lefse for the season was made just before my winter break. I had shared with some co-workers with the previous batch and was asked if I’d sell some for Christmas. My mom used to do that every year but I had never even considered it…until now.

I had to document this…grilling steak on Christmas Eve is absolutely crazy to me. What a treat to have in the middle of winter!

I bought myself a little gift at a local craft fair. I have no skill or patience with needlework. I love the look but I’m never going to do it so when I saw this, I had to have it.

We are in our second week back to school. I keep my favorite water bottle with me throughout my day. I usually end up drinking 2 of these 32oz bottles. I definitely drink more water at school than when I am home.

Once a month blogging seems to be my new benchmark. Times have changed. I remember when I was posting 3-5 times a week…oh, the good old days!

November has flown by with the exception of the past week when I was so very sick with a wicked virus (not COVID) that eventually turned into a sinus infection. I missed work last week…of course, we only had two days. I missed Turkey Bingo which is pretty much the most fun event we do as a staff. We postponed Thanksgiving until Saturday. GAH! What a lame week!!

Ok I’m done whining…on with the month in review.

I’ll start with a little lap crafting I’ve been doing. I saw a tutorial on YouTube making ephemera for junk journals using 6×6 scrapbook paper. I didn’t want to make ephemera but I knew this technique would lend itself very well to small size envelopes if I tweaked the process slightly. They are the perfect size for gift cards, small jewelry, stickers or anything else you’d want to gift inside. I got a little carried away when I was pulling out papers but now I have enough small envelopes to last for years!

I’ve been doing a lot of cooking and preserving this month as well.

My red cabbage sauerkraut is finally ready to consume. I’ve never tried making this before nor have I eaten red kraut. I like it and will definitely do it again.

My pressure canner is getting its use after a long time of me being too scared to use it. I canned up 13 pints of broth. Previously I’d just freeze the broth but that takes up valuable real estate in the freezer plus if you forget to take it out ahead of time, that’s a pain too.

The first batch of lefse is complete for the season.

I know I’ll make at least one more batch around Christmas. I’m going to have to try out my new griddle for the next round. I noticed that this one wasn’t heating evenly anymore. She’s 25 yrs old so I think I can forgive.

Since I was off today as well I had time to make personal turkey pot pies for us to have for dinner. They aren’t the prettiest but they are so yummy but so filling!!

Our school put on its annual Veterans Day celebration on Nov 10th. It’s always a fantastic event and I was actually able to sit in the bleachers this year to get a different view of the ceremony.

Marvin turned 9 on Nov. 11th. He had a couple extra treats and some special attention for his birthday.

My neighbor and I went on a little road trip to her son and daughter-in-law’s house who happen to live only about 35 minutes from where Mini-me goes to college. We met them for lunch in town then Mini-me headed back to college.

The rest of us went to a local winery. Its was super busy so we took a seat in the production room.

And what does this girl choose to have at a winery…a beer. It was a Minnesota craft beer. I don’t drink wine much anymore. It makes my joints hurt. Weird side effect that makes it not worth it to have any.

I went on a field trip the Monday before I got sick…I’m thinking either the bus ride or lunch facilities was the culprit of the germs. It was a beautiful day for a walk in the woods though.

The weather has definitely shifted so I am thankful the dome is back up from my morning walks. I’m thinking about signing up for a challenge that has you “walk the year”. Meaning, I’d have to walk 2024 miles next year. I think I can do it. I’d just have to push myself a little more on the weekends. So far this year without pushing myself, I’ve walked just shy of 1400 miles so far.

Back to work for me tomorrow morning. I’m looking forward to being back in a routine. Although, I can’t say that I didn’t enjoy today. I crafted, cooked, cleaned up and still had energy to blog and still feel like I had a somewhat leisurely day.

Since it’s been a hot minute since I last posted, I thought it would be most efficient to do a month in review.

Work has been tiring of course but when I have had the energy or inspiration; I’ve been mostly obsessed with my sewing machine. Whether its fabric or paper or a combination of the two…I’m running it through my machine with reckless abandon.

I’ve started work on a few new journal covers. This one has me stepping outside my comfort zone with the bold floral print as well as bright colors. Definitely not my usual but perhaps the shake up will act as inspiration or a challenge. I created two more but evidently forgot to snap a picture.

Making cards is always a relaxing activity for me. I had punched a ton of circles one day sitting in front of the TV watching who knows what. I like to have my hands busy so I don’t find myself snacking. But I digress… I sat down at my sewing machine with a couple different piles of scraps. Fabric and paper as well as the afore mentioned circles. I have mentioned lately how much I love circles!! I do, trust me.

Now I have a large stack of cards ready to go when an occasion arises. Just add a sentiment or even just a note on the inside.

The kids came home from college for Thanksgiving break. It was great to see them in person again. Just a couple more weeks and they’ll be home for a month between semesters. Marvin was very excites when Mini-me came through the door. He thought it was me coming home from work but it was his girl. She said that he yelled excitedly. Of course that never lasts too long…the comfort of napping on the “grandma blanket” always wins out.

Mini-me sent me this one day. The thrill of seeing your own work (or your offspring’s) never gets old.

Mini-me helped me make our first batch of lefse of the season. We were definitely a bit out of practice…it had been almost two years since I made any. We made a small batch…just enough for Mini-me to bring some back to share with her friends at college and of course, for us to have a few.

Lastly I’ve been continuing to sew my random scraps together. I decided on 9.5 inch blocks. I just keep stitching and ironing and stitching and ironing…until I have a big enough piece to cut my square. I decided on 9.5 inches mostly because I have a square quilting ruler that size.

I don’t have a plan in particular for these blocks. I assume I’ll put sashing between the blocks to give the eye a place to rest. But for now I’m just creating a very colorful stack of blocks.

I’m certainly not promising that I will be posting more often but it does feel good to get my words on the page.

Welcome to T stands for Tuesday where we share a little about whatever the heck we want along with our beverage of choice. Pretty easy rules, right?!? Here’s my adherence to the rules…

Since I am finishing up my extended break from work….6 days off… Woohoo!…. I thought I’d share a few highlights.

Wednesday evening, Mini-me and I went to MOA (Mall of America) not to shop but to pick up J.  So cool that he can take the bus right from campus to home…or relatively close.

Thursday, we enjoyed a lovely meal at my in-laws. I brought the stuffing aka: dressing as it is unstuffed. I wrapped the dutch oven in newspaper and towels just like my parents taught me when I was a kid.Later my BIL followed us home to extend our visit a bit. We hadn’t seen any family in a couple months which is sad when we are only about 20 minutes drive from one another.

Friday, we decorated for Christmas….it’s our tradition to decorate the day after Thanksgiving. No Black Friday shopping for us. Only twice in my life have I braved that chaos. No thank you!

Saturday was so quiet I can’t even remember what we did…or didn’t do.

Sunday Mini me and I made the first batch of lefse of the season. So yummy.  Of course, later In the day Mr. G and I had to deliver J back to MOA to catch the bus back to college.  Just a few short weeks and we’ll be driving up north to get him for winter break.

Monday I spent going through some totes in the storage room. I was able to reorganize and purge enough stuff that I have one completely empty tote. Mini-me and I brought a pile of stuff to Goodwill to donate. They always give a 25% off coupon when you donate…so of course we went in to see what they had. Mini-me found some yarn…she’s requesting another cowl.

I did manage to work on some creative pursuits as well during this long break.  You can check out the previous two posts for my vintage linen remake and art journal page. I also continued work on my personal journal and completed my December Daily journal. It’s all ready to go! I’m thinking I’ll do a video with a flip through perhaps. It has WAY too many pages for photos. WAY more than I need but hey…I’m still learning with this process.

She’s been trying little bits of it all through the break but tonight decided to go all in. I helped her spray it in damp hair…now she’s waiting to rinse.

I think it will be fun regardless. Besides…it’s temporary. When I go, I go all in with the pink hair…permanent style.

Tuesday is back to reality for everyone.  All good things come to an end. I do really like my job, so its not all bad. I just miss my free time. My mini-me time. Gosh, it’s going to be really hard when she goes off to college. *sniff*
